MAKE THESE: Greek Yogurt Blueberry Pancakes

Just so you know, my dad makes the best blueberry pancakes I have ever had. As kids we used to eat (read: inhale) them every Sunday in heaping stacks while watching Reading Rainbow on PBS. As an adult I haven't felt quite the same way about pancakes as I did as a child. I tend to be more of a savory breakfast/bruncher. Eggs on bennies on quiches with a side of meat meat meat please. This was until recently when I went to brunch at one of my favorite SF spots (The Corner Store) and was so ravenously famished that I suggested that my friend and I share an order of their blueberry pancakes in addition to our savory egg based main entrees. As soon as the plate was set between us and the butter and syrup liberally applied we dug in and chewed in blissful silence and all was right with the world.

From that moment on I have been LITERALLY addicted to blueberry pancakes. I want them ALL the time. I make them after yoga. I make them for dinner. I make them with sides of bacon. I make them with friends. I make them alone in my pjs. And while this may not sound like the healthiest of addictions, the recipe below actually makes this pancake habit 1. easy!!! and 2. relatively not terrible for me. It's a goddamn blueberry pancake miracle. 

REJOICE! 

Greek Yogurt Blueberry Pancakes - adapted from here
(makes 2-3 larger pancakes or 4-5 smaller ones)

Ingredients
3/4 cup 0% fat plain Greek yogurt
1 egg
1/2 cup flour
1 tsp baking soda
1 tsp vanilla
a whole package of fresh blueberries because why the fuck not 

Directions

In a medium sized bowl blend everything together EXCEPT the blueberries until smooth. The batter should be pretty thick and sticky. That's totally ok, don't panic 

Spoon as much batter as you want onto a non-stick pan heated to low-medium. Use spoon or your fingers to gently spread out batter into an even circle on the pan. The thinner it is, the quicker it takes to cook but sometimes a little thickness is cool. 

Put several blueberries on pancake batter. As many as you want. Press them down gently. 

Flip the pancakes when they start to bubble a bit on the surface. Don't burn them or you will be emo. They should be done when you start to hear the blueberries sizzle. Serve with butter, syrup and a smile. Watching Reading Rainbow is entirely optional.
